Chinese Carrot & Egg Stir Fry

Ingredients: 300g Carrots 3 Eggs 2 Spring Onions 3 Cloves Garlic 1 Red Chilli Pepper 1 Tbsp Light Soy Sauce Salt To Taste


1. Thinly slice the carrots and then cut into thin threads

2. Finely chop the garlic

3. Finely chop white part of the spring onions, and then roughly chop the green part

4. Finely chop the chilli pepper

5. Break the eggs into a bowl and mix well

6. Heat 1 Tsp of oil in a wok

7. Add the egg mixture to the wok, slowly stir, fry for 2 minutes or until the eggs are cooked through

8. Remove the egg from wok

9. Heat 1 Tbsp of oil in the same wok

10.Place the white part of the spring onion, garlic and chilli pepper in the wok, stir-fry for 10 seconds

11.Add the carrots and stir-fry for 2 minutes

12.Add the eggs, salt and stir

13.Add soy sauce, green part of the spring onion and stir

14.Transfer to a dish and serve
