Ingredients (2 servings): 5-6 eggs Tonkatsu Sauce (link)
Fried rice
Chives or Parsley
Method:
- Scramble the eggs, set aside
- Plate up your fried rice so that it's sitting in the middle of the plate, rounded
- Hot pan with oil
- Pour in half your eggs. With chopsticks, pull in from the edges and begin turning the pan after 5-10 seconds so that the excess egg spills into the pan from the sides
- This should take no longer than 10-15 seconds (it should still be runny). Once complete, place on top of your fried rice.
- Pour egg on top of rice
- Pour tonkatsu sauce around rice & egg
- Serve!
